Estelle's Pecan Puffs

Crunchy and full of protein, these pecan puffs are a lovely Christmas or Holiday favourite. Ingredients
1/2 cup (125ml) soft butter
2 tsp (10ml) sugar
1 tsp (5ml) vanilla
1 cup (250ml) pecans, ground
1 cup plus 2 tbsp (250ml + 30ml) all-purpose flour
Icing sugar
Directions
Preheat oven to 300F.
Mix all together and roll into small balls. Bake on greased sheets for about 45 minutes. Roll in icing sugar immediately and again before serving.
